Dye free Green Eggs and Pancakes for Dr. Seuss' Birthday

We love Dr. Seuss. And though I'm really late in posting this, we had green eggs and pancakes for Dr. Theodor Seuss Geisel's birthday on March second. Mr. T's namesake would have been proud :)

If you have been reading some of my other posts lately, we are not a dye friendly household. Mr. T has terrible reactions to Yellow and Red dyes. Of course, I've been 100 times more careful about what we all eat since learning that Yellow #5 is actually made from coal tar. Ick. Anyway, I set out to have a colorful breakfast that didn't include icky things and this is what we had!

Green Eggs: Put your eggs into a blender with a hand full of baby spinach and puree. I have to tell you that these were the best scrambled eggs I've had in ages, and they didn't taste like spinach so my hubby even liked them.

Green Banana Pancakes:
3 large eggs
a hand full of baby spinach
1-2 medium sized ripe bananas
1 cup of almond meal or oat flour
1 tsp baking powder (I always use the aluminum free)
1 tsp baking soda
and real organic butter or coconut oil for your griddle

You can use a variety of toppings, and these green pancakes taste a lot like banana bread. We just used maple syrup this time, but vanilla syrup, fresh strawberries and whipped cream or any other pancake topping would be wonderful.

Blend your eggs and spinach until smooth, add bananas and puree until it's a smoothie consistency. Pour into a large bowl and add flour and baking powder/soda. Mix well, and ladel onto your hot greased griddle in 1/4 to 1/3 cup increments depending on how large you like your pancakes. These do puff up and take a little longer than regular pancakes to cook, but not by much. Enjoy!
