Gluten free banana peanut butter honey muffins. That's a mouthful but these are so yummy it's worth saying twice! This is our second gluten free baking experiment for Mr. T's cookbook for August. We need to make the cinnamon rolls again so I can post a recipe with pictures. Recipes without pictures just don't entice me, so I doubt they do much for anybody else. And the cinnamon rolls are wonderful, too!
I digress. These perfect little muffins, or "cuh kay" as Mr. T calls them, are healthy and a tad sweet and the recipe is very simple. Always a bonus. I might have taken a few mommy minutes to enjoy some with my coffee this morning while the boys played with blocks. Did you remember to take a few mommy minutes today?

Gluten Free Banana Peanut Butter Honey Muffins
Ingredients:
2-3 small very ripe bananas
3 TBS peanut butter
1/4 cup of raw honey
1 TBS coconut oil
1 tsp vanilla
1 egg
2 TBS coconut flour
1 cup Gluten Free flour blend
1 tsp baking powder
Preheat oven to 350 degrees.
In a large mixing bowl, mash bananas till smooth. Add
peanut butter, melted coconut oil, egg, honey and vanilla and mix on medium until all the lumps are gone. Add in flour and mix till smooth.
Pour into lined muffin tin and fill each cup to 2/3 full. Bake for 14-16 minutes or until a toothpick inserted in the muffin comes out clean. Enjoy!
