Gluten Free Baking Fun

gluten free, banana muffins, homeschool baking

Gluten free banana peanut butter honey muffins. That's a mouthful but these are so yummy it's worth saying twice! This is our second gluten free baking experiment for Mr. T's cookbook for August.  We need to make the cinnamon rolls again so I can post a recipe with pictures. Recipes without pictures just don't entice me, so I doubt they do much for anybody else. And the cinnamon rolls are wonderful, too!

I digress. These perfect little muffins, or "cuh kay" as Mr. T calls them, are healthy and a tad sweet and the recipe is very simple. Always a bonus. I might have taken a few mommy minutes to enjoy some with my coffee this morning while the boys played with blocks. Did you remember to take a few mommy minutes today?

Diet Fun

gluten dairy free dessert, coconut chocolate pudding, non dairy chocolate dessert

So part of Mr. Ts treatment plan currently is a gluten, dairy and soy free diet. It's expensive and tough, and Mr. T has had some trouble adjusting. So have I. But thankfully I have friends and Pinterest. I have a seriously awesome Gluten Free board. Check it out! I need to mark the recipes I've tried. Most have been great!

The above picture is of a great dessert I modified off a Pinterest recipe. It's coconut milk, cocoa powder, vanilla and stevia topped with AH!Laska Organic Chocolate Syrup.

It was a hit! Thankfully Mr. T stopped short of eating the glass (thrift store finds!). But we are getting the hang of the non-dessert side of this diet, too. Mr.T is learning to eat veggies. Slowly.
